Cappon magro is Genoa’s elaborate tower of fish, shellfish, vegetables, sailor’s biscuit and sharp green sauce—once frugal, now celebratory.
The dish turns separately cooked maritime and garden ingredients into a careful layered construction. Its fasting-day “magro” identity and sailor’s-biscuit base connect it to Genoa’s seafaring table; later festive versions became tall, colourful and crowned with shellfish.
Clean fish and sweet shellfish meet earthy vegetables, vinegar-softened biscuit and a lively parsley, caper and anchovy sauce. The layers should stay distinct rather than collapse into mayonnaise-heavy seafood salad.

Cook fish, shellfish and each vegetable separately; season with oil, vinegar and salt. Layer with green sauce over softened sailor’s biscuits, press and rest, then unmould and decorate with eggs, olives, seafood and vegetables.

Ask whether the cappon magro is the house interpretation or a full traditional tower, and whether it is available à la carte. It is labour-intensive and often seasonal, so reserve or call ahead.
