Pesto Genovese is Genoa’s fragrant, uncooked basil sauce: small tender leaves, garlic, pine nuts, aged cheeses and olive oil worked cool, then loosened over pasta.
Its character comes from Liguria’s aromatic basil and a mortar technique that tears rather than heats the leaves. The sauce is now inseparable from Genoese food culture, but it is best understood at the table—on trofie, trenette, gnocchi or silk-thin mandilli—rather than as a jarred condiment.
Fresh basil should lead, with sweet pine nuts, rounded cheese, gentle garlic and clean olive oil. The colour may soften naturally, but the flavour should never taste cooked, bitter or aggressively garlicky.

Crush garlic and pine nuts, then work dry basil leaves with coarse salt in a cold marble mortar; fold in Parmigiano, pecorino and olive oil without heating or over-emulsifying. Loosen with pasta water only at service.

Order a named pasta al pesto—trofie or gnocchi are easy starting points—and ask whether potatoes and green beans are included. A small mortar of pesto is a useful tasting extra, not a complete meal by itself.

Available through much of the year; production or freshness may be seasonal. Eat immediately while the pasta is hot and the sauce remains uncooked. A light Ligurian white and a simple vegetable course keep the basil in focus.
