Casoncelli alla bergamasca are folded fresh-pasta parcels with a savoury-sweet meat-and-breadcrumb filling, finished with browned butter, sage, Grana and crisp pancetta.
Bergamo’s best-known pasta is not a generic northern raviolo. Its identity lies in the folded shape, a filling that can combine roast meat, salami paste, breadcrumbs, cheese, pear or raisins and amaretti, and the emphatic butter–sage–pancetta finish. Documentary evidence reaches back to the late medieval period, while the present recipe reflects later spice and pantry habits.
Expect tender pasta, a deep meat-and-cheese centre with a restrained sweet accent, nutty butter, aromatic sage and salty pancetta. The sweetness should intrigue, not make the plate taste like dessert.

Make egg pasta, prepare the mixed savoury-sweet filling, seal half-moons and fold the centre to form the characteristic profile. Boil gently and dress immediately with browned butter, sage, pancetta and grated Grana.
