The essential guide
Four image-led notes · the things worth knowing
Short buckwheat ribbons arrive layered with potatoes, cabbage, Valtellina Casera and hot garlic-sage butter.
Teglio is the recognised heart of this IGP pasta. The protected identity covers the pasta, while the traveller experience is the complete hot dish: buckwheat noodles cooked with vegetables and finished in cheese-rich layers.
Earthy buckwheat, sweet cabbage and potato soften into molten dairy, lifted by sage and browned butter.

Boil pizzoccheri with potato and cabbage, layer with Casera and grated cheese, then pour over garlic-sage butter.

Ask for the Accademia-style preparation and confirm Valtellina Casera; white Valchiavenna pizzoccheri are a separate dish.

Served year-round and especially satisfying in cooler weather; confirm the traditional preparation when booking. Order as a substantial primo and let the layers rest briefly before mixing.
